The thirty-first Act of 70 x 7 The Meal staged in the British seaport of Plymouth celebrates sustainable methods of cooking, preparing and sharing food, as a collaborative project involving local artists, Jo Salter and Anne-Marie Culhane.
The menu of food consisted of locally-sourced produce foraged by Caroline Davey and prepared by chef Justin Ashton. The carbon impact of the project was monitored through a series of methods, which included visual mapping and carbon footprint data collection. Groundwork organisation calculated the carbon miles including guest tavel and transportation means, the ingredients, and the provenance of the dinner service. During the course of the evening, the insights gained were transcribed by illustrator James Mankiewicz onto backboards, to expose the environmental cost of the meal.
